Relicing
The term "relicing" is borrowed from guitars. Preserving patina and "oily rag" treatment are similar. In guitars, you can go into a shop and buy a lovely £2000 instrument, or for £2200 the same thing covered in scratches. This is done at the factory to make it look like it has been on tour for years. Many people think this is silly.
Taking an old bike, cleaning off the dirt and rust while preserving the remaing paint, then varnishing or laquering it, is less objectionable than deliberately ruining a perfect finish. It takes far longer than just sending it off to be blasted and powdercoated. Here are some pictures.
